We got our "new" double boiler pot set on Friday. I was so excited. I made a rice pudding recipe this afternoon. It was a success and a failure. Everything cooked wonderfully. But, I divided the recipe in half but didn't divide the salt amount correctly. so I'm sure it wasn't the failure of the Thermowell. The recipe I used was one out of Joy of Cooking. I used the timing from the Idle Hour cookbook.

I'm going to try it again tonight. I used a piece of vanilla bean instead of vanilla extract and I could really tell a difference. the vanilla came through even with the added salt. I will post the recipe and timing as soon as I can do it right. Yesterday was just a total flop for my cooking skills. I also found out that cooking a "thawed" pork roast on retained heat just doesn't work the same. I thawed it in the microwave but i suspect it was still too frozen in the middle. the timing i used on a fresh pork roast just didn't work on the partially frozen one.
